process. In food production should use safety bleach. One of the food product that used bleach in its process is crispy peanut. Crispy peanut industry is one of the developing agroindustry in Indonesia. Peanut as raw material is available in Indonesia, beside that crispy peanut also have potential market in domestic and foreign country. Some of crispy peanut industry used alum as additive in order to make the color of peanut looks white and clean. Using alum or other bleach which is unlisted as additive food in food processing is not recommended, because it can leave residue that has negatif effect for health. Calcium sulfat and calcium oxide can be used as bleach in crispy peanut production. Both of calcium sulfat and calcium oxide are additive food that can be used to improve color and also as bleach. Using of calcium sulfat and calcium oxide in crispy peanut processing resulted optimal lightness level value on 1% concentration treatment. The result analysis base of quality requirements, crispy peanut with kind of bleach 1% concentration treatment meet the determined standard.
